Abalone Mushroom
The Abalone Mushroom (Pleurotus cystidiosus), common-named for its taste and textural similarity to Abalone shellfish. Thick, meaty fruiting bodies similar to those of King Oyster Mushrooms, with a richer, buttery flavour. An excellent seafood/shellfish replacement is soups and bisques, where vertical slicing does the best job of showcasing the mushroom's unique structure.
