Blowfish Mushroom
This British relative of the Lion's Mane Mushroom is commonly known as "Tiered Tooth Fungus," but there is nothing common about it. This very rare species has a delicate fish meat texture and flavour, when cooked, and often used as a vegan substitute in recipes calling for fish. Since foraging for it in its home country is illegal, we have to rely on cultivation techniques to enjoy cooking it without getting into hot water, ourselves! Unlike its aquatic counterpart, the Blowfish Mushroom is safely edible, and a fun replacement for Fugu. Great for sauté, soup, stew, stir-fry, pasta, rice or noodle dishes, but just as at home with potatoes or salads. Try it cooked in tempura or beer batter!
