The Blue Oyster Mushroom (Pleurotus columbinus) is a delicious, 'woodsy'-flavoured, versatile gourmet mushroom with a delicate cap and firm stem (rather like asparagus, in texture). Great for sauté, soup, stew, stir-fry, pasta, rice or noodle dishes, but just as at home with potatoes or salads. Used in traditional/folk medicine as a soup/stew ingredient to boost the immune system during cold and 'flu seasons.
