The Branched Oyster Mushroom (Pleurotus cornucpiae), with its pronouced aniseed fragrance, is likely the clade ancestor for the aromatic Pleurotus species, the Golden, Pink and Tarragon Oyster Mushrooms. Great for sauté, soup, stew, stir-fry, pasta, rice or noodle dishes, but just as at home with potatoes or salads. It's anise flavour profile pairs especially well with Latin American, Indian and Italian cuisine.
