The Cauliflower Mushroom (Sparassis crispa) resembles a looping cluster of flat noodles, with a firm, cartilaginous texture when cooked, and an earthy flavour similar to Morels. This makes them a great addition for soups, stews, hot pots and stir-fries, complimenting or even replacing pasta or noodles in any dish. Regarded as a potent folk-medicinal mushroom, scientific studies have already lead to the prescription of its extracts as cancer medication and for COVID-19 patients in Japan.
