Commonly identified as simply 'Enoki', and recently recognised as the distinct species Flammulina filiformis, this mushroom plays a significant role in Chinese and Japanese cuisine, with a mild and sweet flavour. Special cultivation techniques are employed to create elongated stipes (the 'stem' of a mushroom) and small pilei ('caps'), resulting in an overall crunchy texture and noodly appearance when cooked in stir fries, soups, stews and hot pots.
