Hedgehog Mushroom
The Hedgehog Mushroom (Hydnum repandum) is a wild, foraged fungus with a mildly earthy flavour, soft textured cap and crunchy stem, and visually distinct appearance - 'spines' hanging beneath an orange-buff, flattened cap with wavy margin. Seasonal from late Autumn to early Spring. As one of the best loved wild mushrooms in France, it pairs especially well with French cuisine. Best sautéed whole to preserve its visual uniqueness, piled beside protein as a side, or added to soup, where its spoon-sized caps add value to every mouthfull.
