King Oyster
The King Oyster Mushroom (Pleurotus eryngii) is a Mediterranian variety with a more prominent, firm stem than other Oyster Mushrooms. Great for sauté, soup, stew, stir-fry, pasta, rice or noodle dishes, but just as at home with potatoes or salads. Try slicing the stem into medallions, and using in place of scallops.
