Maitake (Grifola frondosa) is a polypore fungus (like Reishi and Turkey Tail) with a feathery appearance, an earthy, umami, peppery flavour and a crisp texture leading to a satisfyingly crunchy bite after cooking. This texture makes them great for pizza topping, baking/roasting or sautéing to make mushroom chips or crumble for soups, stews, stir-fry, pasta, potato, salad, rice or noodle dishes.
