Mukitake
Mukitake (Sarcomyxa edulis) have long been highly prized in China and Japan for their mild flavour, ochraceous colour pallette and meaty textures. As a 'Faux Oyster Mushroom', they can replace Oyster Mushrooms in any recipe for an exotic and visual boost. Not to be confused with the closely-related, bitter-tasting and possibly inedible local 'Late (Fall) Oyster Mushroom', Sarcomyxa serotina.

Mukitake (Sarcomyxa edulis): cook thoroughly to break down the fibre in mushroom cell walls for digestion. Good source of protein, vitamins and minerals, anti-oxidants and dietary fibre, low in fat and cholesterol.
