The Phoenix Oyster Mushroom (Pleurotus pulmonarius) is a delicious, 'woodsy'-flavoured, versatile gourmet mushroom with a delicate cap and firm stem (rather like asparagus, in texture). Great for sauté, soup, stew, stir-fry, pasta, rice or noodle dishes, but just as at home with potatoes or salads. Our Phoenix Oyster is cultivated from a wild strain whose spores survived substrate pasteurization and out-competed the mycelium of a rival mushroom we intended to grow. Who are we to argue with such moxie!?
