The Pink Oyster Mushroom (Pleurotus djamor) is a visually-striking, tropical mushroom with a ham (or sometimes salmon)-like flavour and meaty texture. It's often used as a vegetarian/vegan substitute in recipes calling for ham, salmon or even bacon (!). Great for sauté, soup, stew, stir-fry, pasta, rice or noodle dishes, but just as at home with potatoes or salads. They do not store as well as other Oyster Mushrooms, and should be cooked and eaten on the day of purchase, or preserved through drying or freezing for longer-term storage.
