Porcini (Boletus edulis)
Porcini mushrooms have a distinctive nutty, meaty flavour and 'sourdough' aroma, with pores, instead of gills, on the underside of their caps. Foraged Autumnally in our local forests, this mushroom forms a mycorrhizal relationship with certain trees. Great in pastas, soups, risottos, sautéed in butter - withstands drying and reconstituting very well, with little loss of flavour or aroma, and may even be pickled for preservation.

Boletus edulis, the Porcini Mushroom: cook thoroughly to break down the fibre in mushroom cell walls for digestion. Good source of protein, vitamins and minerals, anti-oxidants and dietary fibre, low in fat and cholesterol.
