Wood Blewits

The Wood Blewit (Collybia nuda), is a wild, BC forest-foraged fungus with a striking purple colouration, sturdy structure, fruity-floral aroma (some say 'orange juice!'), nutty-earthy flavour profile and firm, meaty texture when cooked. Benefits from a cream sauce or dry-sauté with shallots instead of garlic to savour the unique flavour. A great breakfast mushroom and omlette ingredient if you feel like upping your game from your common button mushrooms, and one of the best mushrooms for pickling!
